Basil Simple Syrup

Sweet, tangy, and infused with the fresh flavor of summer herbs, this Basil Simple Syrup is the secret ingredient that takes homemade lemonades, strawberry drinks, mocktails, and cocktails to the next level.
Fresh basil leaves steep in a classic simple syrup, creating a subtly sweet infusion with bright, garden-fresh notes. Keep a jar in the refrigerator and add a splash whenever you want to elevate a glass of lemonade or create a refreshing strawberry basil spritzer.

What you'll need:
1 cup sugar
1 cup water
1 cup fresh basil leaves

How to make it:
Heat equal parts sugar and water over medium heat until dissolved.

Remove from heat. Add a generous handful of fresh basil leaves (lightly bruised).

Cover and steep. Taste every 30–60 minutes until it reaches the flavor you want.

Strain out the basil and refrigerate.

Notes: Steeping time depends on how strong you want the basil flavor:

  • Light, fresh basil flavor: 15–30 minutes

  • Balanced flavor (my recommendation): 1–2 hours

  • Strong basil flavor: 4–8 hours in the refrigerator

One thing to watch for: basil can develop a slightly bitter or "green" flavor if left too long, especially at room temperature. If you're planning to steep longer than a couple of hours, move it to the refrigerator once it has cooled.

The syrup should keep 2–3 weeks in the refrigerator after straining if stored in a clean, airtight jar.

For cocktails, mocktails, lemonade, or Italian sodas, I usually find 1–2 hours gives the brightest basil flavor without bitterness.
My favorite alcohol to use with basil syrup is a botanical gin. Together they make a delicious and refreshing herby/floral cocktail.
