Creamy Cajun Potato Soup

This creamy Cajun potato soup is comfort food with a little kick. Tender potatoes simmer in a rich, velvety broth seasoned with bold Cajun spices, creating the perfect balance of smoky, savory flavor and just the right amount of heat. It's hearty enough to make a meal on its own but simple enough for a cozy weeknight dinner. Serve it with crusty bread for dipping, and don't be surprised if everyone goes back for a second bowl!

What you'll need: Serves 6-8
12 oz Aidells Chicken & Apple Sausage or Kielbasa sausage, diced
2 Tbsp olive oil
1 small yellow onion, diced
3 stalks celery, diced
2 medium carrots, peeled and diced
1 red bell pepper, diced
1 orange bell pepper, diced
1 Tbsp Cajun seasoning
2 large fresh garlic cloves, minced
6 cups chicken broth
1 ½ lb Baby Dutch Yellow Potatoes, cubed
½ cup heavy cream
Salt to taste

How to make it:
Brown the diced sausage in oil in a soup pot over medium-high heat until browned, transfer to a plate.

Add onion, celery, carrots, and bell peppers; salt to season. Reduce heat to medium, partially cover, and sweat until vegetables soften. Add in minced garlic and Cajun seasoning and let cook for 1 minute.

Stir in broth and diced potatoes, partially cover, and bring up to a boil. Reduce heat and simmer until potatoes are fork-tender. Just before serving, stir in heavy cream and the cooked sausage.
