Dairy Free Hamburger Helper(ish)
This homemade hamburger helper–ish dish is quick, cozy, and perfect for busy weeknights. Made in one pan with simple ingredients, it’s full of flavor but completely dairy-free thanks to nutritional yeast, which adds a rich, cheesy taste along with extra B vitamins. Family-friendly and allergy-friendly, it’s the kind of comfort food everyone can dig into together.
What you'll need: Serves 6
1 pound ground beef
16 oz box pasta (elbow macaroni, rotini, cavatappi, etc.)
1 small yellow onion, diced (or 1+ tsp onion powder)
2-3 cloves of garlic, minced (or 1+ tsp garlic powder)
32 oz (4 cups) chicken broth
15 oz can tomato sauce
1 tsp oregano
1/2 tsp salt
2-4 Tbsp nutritional yeast
How to make it:
Sauté diced onion in olive oil over medium heat until softened. Add minced garlic and cook 1 more minute. (Or use the spices and just flavor ground beef.)
Stir in ground beef and cook until browned. Add salt and oregano and let bloom for 30 seconds.
Add chicken broth and tomato sauce. Stir, then add noodles.
Simmer on medium-low, stirring often, until noodles are cooked and liquid is absorbed.
Sprinkle over some nutritional yeast (about 2-4 Tbsp at a time, to taste) and mix for a cheesy flavor and thicker texture.
