Yield: ~1½ cups

Herbs
¾ cup flat-leaf parsley, packed
2 Tbsp fresh chives, chopped
1½ Tbsp fresh thyme leaves
1 tsp fresh rosemary, very finely minced
3 Tbsp fresh basil, packed

Aromatics
1 whole head garlic, roasted (about 7–8 cloves)

Acid
4 Tbsp champagne vinegar
1 Tbsp fresh lemon juice
Zest of 1 lemon

Fat
⅓ cup extra virgin olive oil

Seasoning
1¾ tsp mineral salt (to taste)

How to make it:

  1. Roast the garlic

  • Slice the top off a head of garlic, drizzle lightly with olive oil, wrap in foil.

  • Roast at 400°F (205°C) for 35–40 minutes until soft and golden.

  • Cool slightly, then squeeze cloves from skins.

  1. Prepare the herbs

  • Wash and thoroughly dry all herbs.

  • Finely chop by hand or pulse gently in a food processor (do not purée).

  1. Build the flavor base

    • In a medium bowl, mash roasted garlic into a paste.

    • Whisk in champagne vinegar, lemon juice, and lemon zest until smooth.

  2. Add herbs + seasoning

    • Fold in chopped herbs and mineral salt.

    • Let sit 2–3 minutes to bloom the flavors.

  3. Finish with olive oil

    • Slowly drizzle in olive oil while stirring until emulsified and spoonable.

    • Texture should be loose but cohesive — not oily, not thick like pesto.

  4. Rest & adjust

    • Let rest 10–15 minutes.

    • Taste and adjust salt or acid as needed.

    • This should cling, not run.

    Result:
    Spoonable. Intentional. Restaurant feel.
